I like to make a small sized loaf for the two of us: 1lb of ground beef (I like 90% lean), 1 egg, salt, pepper, 1 small onion chopped, 2 8oz cans of tomato sauce (Del Monte if you can get it), breadcrumbs. Combine the beef, egg, salt, pepper, onions, and 1/2 a can of the tomato sauce. Mix well and add breadcrumbs as necessary to bind it. Shape in a loaf and coat the entire loaf in breadcrumbs. Pour the remaining 1 & 1/2 cans of tomato sauce over the loaf. Place in pan with a small amount of oil on the bottom. Cook at 350 for 60 minutes (or longer if you like it crispy crust style). It is simple, but delicious. Sometimes I add a dash of hot sauce and A1 sauce into the mix. - Mary Carmen
