I'm not sure how I feel about bleu cheese in Mac & Cheese. I love bleu cheese, but it always comes across as too bitter whenever I have it on/in mac & cheese.

I love a good percentage of imported Swiss in my baked mac & cheese. I pretty much like Swiss in anything that requires melted cheese, except lasagna.
