I have some pork shoulder, cut in nice big stew chunks. I also have a bottle of hard cider. And red onion & carrots. What kind of greens would you throw in that pot? Anything else?
Salt, garlic - probably as whole peeled cloves, cumin? Also, I'd use at least one umami "cheat", whether that's fish sauce or anchovies or miso paste. - Andrew C (✔)

I would use spinach or mustard greens. I like stewing with mustard greens cut into strips, the best. I sauteed or roast them first. - Anika

I do have fish sauce. I have spinach, but there's a few dollars to pick up something different. Mustards sound good, I really like them with pork. Should pick up a piece of garlic too, don't have any fresh in the house. Plan to season with my house mix, which is black & red pepper, garlic powder, paprika, celery seed. Fish sauce is salty, prolly won't need to add much salt. Also a lil prepared mustard, I'm out of mustard powder. Maybe a pinch of ginger... - Starmama
Another option would be to mix in fresh greens just before you serve. They'll preserve their flavor and texture and make a nice contrast with the stew. Chopped mustard, kale or bok choy. - Kevin (aka ThreadKilla)
Yes, thin greens would get thrown on top near the end of cooking, to wilt & soak up flavor but not stewed into strings :-) - Starmama
