IT WAS GOOD. A ravioli with squash and cheese and herbs and spices and deliciousness and more cheese sprankled on top. SPRANKLED.

Akiva: Filling - 1 baked butternut squash, 1 yellow onion cooked until glassy, a cup of cottage cheese, some salt & pepper, food process it all together til smooth. Dumpling wrappers from the Chinese market, with 2 tsp of filling or so in the middle, seal and boil. Cover with a ton of browned butter, and cover with Parmesan.

Oh I forgot to mention additional spices. I used Mural of Flavor from Penzeys, but you can also go with dried thyme, sage, tarragon, etc...

I'll look into that. I usually keep a lot of that separately. Terragon especially is GREAT with eggs.
