I don't like to show off Zamms, but the pasta he made tonight was just...sublime. So good. And there was brown butter! And cheese! You, my friend, in a word, rock.

IT WAS GOOD. A ravioli with squash and cheese and herbs and spices and deliciousness and more cheese sprankled on top. SPRANKLED. - Derrick
Akiva: Filling - 1 baked butternut squash, 1 yellow onion cooked until glassy, a cup of cottage cheese, some salt & pepper, food process it all together til smooth. Dumpling wrappers from the Chinese market, with 2 tsp of filling or so in the middle, seal and boil. Cover with a ton of browned butter, and cover with Parmesan. - Zamms

Oh I forgot to mention additional spices. I used Mural of Flavor from Penzeys, but you can also go with dried thyme, sage, tarragon, etc... - Zamms
