Back during my month in Seattle we made mac & cheese that started with roux, used crazy cheeses, had peppers & mushrooms & sundried tomato pesto and was finished with a bacon crust. Yeah, that's right, bacon-crusted mac & cheese. I've wanted to make it again but plans fell through at least 10 times since. But tonight... IT HAPPENS TONIGHT.
