For now, GRRM says seven books. If his blog posts are to be believed, he's finished at least part of the sixth book. If Wikipedia is to be believed, GRRM has told the producers of GoT the outline of the rest of the series just in case he pulls a Robert Jordan. - Victor Ganata

Since books 4 and 5 have significant overlaps timeline-wise even if not plot-wise, they're almost certainly going to have to rearrange the material like the way Peter Jackson ended up interleaving Frodo-and-Sam's scenes with everyone else's scenes.
