are they taking any actions to back this up, how many choices does a vegetarian have at McD's?

I believe the 'green' comes from areas outside of their menu... some of the examples cited are energy efficient refrigeration and bio diesel from their oil... However, I still think they have a ways to go before they're lauded for sustainability.

that's a start at least, perhaps since it is a publicly stated priority then any future complaints might receive more attention?

That's part of the problem with the whole sustainability push right now. Some companies are reluctant to point out the great work they're doing because they fear highlighting some of their deficiencies. At Pepperdine, where I am a business student, they teach honesty over perfection. Time will tell if this is the approach McDonald's will take.
